"Classico" Method, Champenoise method.
GC - GuidoCarlo Classic Method is dedicated to the founder of Tenuta Santa Caterina. It is obtained exclusively from Chardonnay grapes from the Maddalena vineyard. The soil of this vineyard is characterized by calcareous marl, suitable for the cultivation of Chardonnay, its exposure is to the South. The grapes are harvested early in order to enhance their acidity and olfactory profile. The stay on the lees in the bottle is at least 36 months.
