Il Salidoro è un uvaggio di Chardonnay e Sauvignon Blanc coltivati nella Vigna Strada di Valpagna, in suoli di origine marina.
La Tradizione
Salidoro is a blend of Chardonnay and Sauvignon Blanc, which is grown in soils of marine origin. In the name its characters: “sali”, flavour that together with the minerality derives from the ground, and “d’oro” for the golden colour that the wine takes after aging in bottle. Chardonnay and Sauvignon Blanc are able to mature together and blend during vinification, rewarding the nose and palate with a fragrance and a balanced combination of the best characteristics of the two kinds of grapes.

Vineyard location 300 metres a.s.l. with South/West facing
Density per hectare from 4,500 to 5,000 plants/hectare
Training system Guyot
Harvesting by hand, starting from the first days of September
Grape production per hectare 80 quintals/hectare
Fermentation temperature about 18° C, at a controlled temperature. About 10% of Chardonnay ferments in French Oak barrels
Alcohol content 13,5% vol
Contains sulfites
Ageing in stainless steel tanks on the lees for about 9 months, 10% ferment in barrique refines in wood on the lees for 9 months
Service temperature 8° C
Available sizes 0,75 litres and 1,5 litres
